Pineapple Casserole: Easy and Yummy!

Some of you may know that my husband Jerry is a pastor. He has pastored four wonderful churches since we have been married. We cherish the friends and the memories of each church and love that we have such a connection with many of the people – we call them family!!

One of the things I love about our church family is the meals we share.  I always end up with wonderful recipes that I make for my family.

The one I want to share with you today is called pineapple casserole. This is such a simple dish to bake, I try to always have the ingredients on hand in case I need an extra dish for company coming over, or for a meal at the church.

Even my daughter Melissa enjoys cooking this recipe and is asked again and again to bring it when they are sharing a meal with friends. Everyone loves this recipe and it is one of Jerry’s favorites. Pineapple Casserole

2 (16oz) cans chunk pineapple drained           2 cups shredded, mild cheddar cheese

1 1/2 c. sugar                                                           2 sticks butter

3/4 c. flour                                                               1 stack Ritz crackers, crushed


  • Spray baking dish with Pam.
  • Lay pineapple in the bottom.

  • Mix sugar, flour and cheese.  Pour over pineapple.


  • Crush crackers and put on top of the sugar, flour mixture.
  • Melt butter and pour over the crackers.
  • Bake at 350 for about 30 minutes.


Yum Yum…..Oh, did I tell you how easy this recipe is?  Your family and friends will love it!
